What you need:

2 aubergines
1 pint / 475 ml milk
Flour for dusting or dredging
Salt
Olive or sunflower oil for deep-frying
any aromatic runny honey

fresh mint leaves (for decoration)

Sesame seeds

What you do:

Peel the eggplants and cut them into slices about 1/3 inch thick. Place  them in a bowl then add enough milk to cover the slices and place  a small plate on top to hold them down in the milk. Leave to soak for 1 or 2 hours.

Drain the milk off.

Cover a plate with plenty of flour mixed with a sprinkling of salt. Place each aubergine slice  in the flour so that they are completely covered , then shake them to remove the excess.

Deep-fry in sizzling but not too hot oil, turning the slices over as soon as the first side is brown.

Drain on paper towels.

Place the cooked aubergine onto a serving plate, drizzle with honey.

Sprinkle the mint leaves & sesame seeds over the top & serve hot.

What you need:

8 oz / 225 g Plain  flour
Pinch of salt
1tsp Baking Powder
6 oz / 150 g Caster Sugar
100ml Milk
2 eggs
6 oz / 150 g  Butter
6 oz / 150 g Blueberries

What you do:

Pre-heat oven to 200C / 400F/ Gas Mark 6

Sift the flour, salt and baking powder into a mixing bowl, stir in the sugar and mix together. Make a well in the centre
Put the milk, eggs and butter in a jug and whisk until combined

Add blueberries to the bowl and fold them in
Place 10 muffin cases (roughly, your mixture may make more or less) in a deep muffin baking tin and spoon the mixture in
Bake for 20 mins  or until well risen
Cool on cooling rack

What you need:

6 1/2 lb /3kg strawberries, hulled, halved
6 1/2 lb / 3kg white sugar
Juice from 1/2 a lemon

What you do:

First of  all wash and sterilise the  jars and lids that you will use.

In a large saucepan, put in the strawberries and sugar & mix all together.

Leave for a couple of hours so the sugar can soften all the fruit.

Add the lemon juice then simmer over medium heat, stirring all the time untilall the fruit is soft.

Remove 1/3 of the fruit & leave to one side.

Keep simmering the remaining mixture until fruit is mostly dissolved & the  jam coats the back of a spoon.

Divide the fruit that was put to one side  between the jars then fill with jam.

Allow to cool, then seal with the lids.

Keep refridgerated.

What you need:

4 oz / 100g sugar
1 oz / 25g butter ( melted)
1 beaten egg
1 lemon ( grated rind & juice)

What you do:

In a saucepan, put the butter, sugar & egg and whisk together well. Add the grated rind & lemon juice then mix all together well.
Simmer gently over a low heat all the time stirring until it boils. Continue cooking for around 3 – 5 mins until the mixture is fairly thick stirring all the time.
Pour the mixture into a heated jar then cover it & seal it.
Keep it refrigerated.

What you need:

3/4 cup finely chopped fresh mint leaves
2 tsp caster sugar
60 ml boiling water
125 ml white wine vinegar

What you do:

Mix together the mint and caster sugar in a small heat proof mixing bowl.

Add the boiling water and stir gently until the sugar dissolves.

Add the vinegar and mix well.

Leave to cool completely before using.

What you need:

3 oz / 75g fresh watercress ( finely chopped)
3 oz / 75g fresh spinach ( finely chopped)
3 tbsp creme fraiche
4 tsp tomato paste
4 eggs
small knob of butter.

What you do:

Preheat the oven to 180C / 350F / gas mark 4

In a bowl , mix together the watercress, spinach , creme fraiche & tomato paste.
Divide the mixture between 4 ramekins (or something similar)
Crack an egg on top of the mixture in each pot ( in the middle) then dot with butter.
Place the dishes in a large oven proof dish then bake in the oven for between 7 – 10 mins or until the white is set & the yolk soft still.
Serve hot.

What you need:

2 1/2 lb / 1 kg of ready cooked mash potatoes
1 large or 2 small tins of drained pilchards ( bones removed)
1 oz / 25 g butter
1 clove of garlic ( crushed)
2 tbsp of chopped fresh parsley
2 oz / 50 g cheese ( grated)
1 tbsp of lemon juice
1 egg ( whisked)
5 oz /150 g fresh bread crumbs

What you do:

In a bowl , mix together the sardines, crushed garlic ,parsley and mashed potato together .
Season well and shape mixture into 10 fishcakes
Dip each cake in beaten egg and roll in breadcrumbs to coat
In a large frying pan heat the butter in a pan and fry fishcakes until golden.
Drain on paper kitchen towel and serve

What you need:

2 x 5oz / 125g salmon fillets
2 tbsp / 30 ml brown sugar
1 tsp / 5ml dijon mustard
juice of a lime

What you do:

Lay the salmon fillets side by side in a shallow dish.
Whisk together the lime juice, sugar & mustard until smooth.
Pour the mixture over the salmon fillets & leave to marinate for around 15 mins.
Cook the fillets in a microwave oven until almost done then pour the sauce over & grill for 2 minutes.
Serve immediately.

What you need:

For the topping…
4 oz / 100 g butter
6 oz / 150 g wholemeal flour
4 oz / 100 g grated cheese
2 oz / 25 g chopped mixed nuts
2 tbsp / 30 ml sesame seeds

For the base …
1 1/2 lbs / 600g mixed root vegetables
1 large onion
8 oz / 200g tomatoes
1 oz / 25g wholemeal flour
1/2 pt / 300 ml vegetable stock
1/4 pt / 150 ml milk
3 tbsp / 45 ml chopped parsley

What you do:

pre heat the oven to 190C / 375F / gas mark 5

Base :
Chop the vegetables
In a large frying pan saute the onion until translucent.
Add the prepared vegetables & cook on a gentle heat stirring occasionally, for around 10 mins.
Stir in the flour, then add the rest of the ingredients.
Bring to the boil, then reduce the heat , cover then simmer for around 15 mins or until the vegetables are tender.
Transfer to an oven proof dish.
Topping…
Rub the butter into the flour then add the cheese, nuts & sesame seeds.
Press the topping all over the vegetables.
Bake in the oven for 30 mins.
Serve hot .

What you need:

8 oz / 200 g crushed peanuts
8 oz / 200 g brown breadcrumbs
1 tsp fresh or dried herbs
2 eggs beaten
2 large carrots ( grated)

What you do:

Pre heat the oven to 160C / 325F / gas mark 3

Grease a 1lb / 500 g loaf tin.
Blend all the ingredients together in a large bowlthen pour the mixture into the greased loaf tin.
Place in the oven & bake for 1 hour .
