What you need:

1 12-oz. jar roasted red peppers, drained and coarsely chopped
1 clove garlic
1/8 cup olive oil
1 cup feta cheese, crumbled
Salt and pepper
Assorted crudites for dipping

What you do:

Puree first 4 ingredients in a food processor until smooth. Season with salt and pepper.

Cover and chill 2 hours.

Serve with crudites.
