What you need:

12 fl oz / 75ml Marsala
4 trifle sponges
1 tbsp / 15ml strawberry conserve
1 banana
15 oz /400g fresh custard
15 oz / mascapone cheese
18 oz / 500g fromage frais
1tsp / 5 ml vanilla essence & sugar
2tbsp / 30 ml toasted flaked almonds

What you do:

Spread the trifle sponges with the strawberry conserve, then place in the bottom of the serving bowl, then sprinkle with marsala then leave for 10 mins.
Hull the strawberries & cut each one in half or quarters.
Peel the banana & cut into medium size chunks & put in the bowl along with 3/4 of the strawberries.
cover the fruit with custard.
Put the mascarpone & fromage frais into a bowl & mix together using an electric whisk.
Add the vanilla sugar & briefly whisk again.
Spoon the mixture on top of the custard & spread evenly.
Keep in the fridge until around 1/2 hour before serving.
Arrange the rest of the strawberries on the top & sprinkle the top with the flaked almonds.

What you need:

2 skinless salmon fillets
4 leeks , (trimmed and finely chopped)
1 oz / 25g butter
3 1/2 oz / 100g full-fat crème fraîche/ plain greek yoghurt  or cream cheese
6 sheets filo pastry

What to do:

Preheat the oven to 200C/ 400F/ gas 6.
Put the chopped leeks into a large saucepan with 3 tbsp water and a couple of knobs of butter.

Cover, then cook for 10 mins until tender. Remove from the pan, allow to cool, then mix with the crème fraîche and some seasoning.
To make the parcels, brush a sheet of pastry with melted butter, then lay 2 more sheets on top, brushing butter between each layer. Place a salmon fillet in the middle, season, then spoon over half the leek mix. Fold the ends over the top, pull up the sides and scrunch together to enclose. Repeat.
Brush both the parcels with melted butter. Place onto a lightly greased baking tray, then cook for 20 / 25 mins until golden and crisp.

What you need:

225 g  macaroni
6 tbsp butter ( 3 of which are for the topping)
3 tbsp plain flour
1 tbsp powdered mustard
1/2 teaspoon paprika
3 cups milk
1 onion diced
1 egg
350 g mature cheddar grated
110g dry breadcrumbs

What you do:

Preheat the oven to 180C / 350F / gas mark 4
In a large saucepan, bring to the boil the macaroni, then simmer for 10 mins.
Meanwhile in a different saucepan, melt the butter, then slowly whisk in the flour & mustard powder until smooth.
Stir in the milk, onion and paprika and Simmer for ten minutes.
Break the egg into a large bowl, then stir in the cheese.
Drain the macaroni, and pour into a 2lt oven proof dish. Pour the egg & cheese mixture over the top, then sprinkle the remaining cheese over the top.
In a small saucepan, melt the remaining butter then pour in the breadcrumbs. Mix together to make sure all the crumbs are coated.
Top the macaroni with the bread crumbs.
Bake for 30 minutes.

What you need:

2lb butternut squash (peeled & cubed )
1 1/2 oz slice white bread
4 teaspoons olive oil, divided
1 large onion thinly sliced
1 tablespoon chopped fresh sage
1/4 teaspoon freshly ground black pepper
Cooking oil spray
2 oz crumbled blue cheese

What you do:
Preheat the oven to 190C / 375F / gas mark 5.
Steam the butternut squash ( in a covered saucepan) for about 10 mins or until soft.
Put the slices of bread into a food processor & ‘pulse’ until coarse crumbs.Transfer to a small bowl, add 2 tsp of oil, and mix with a fork to combine.
Heat the remaining oil in a frying pan over a medium heat. Add sliced onion & saute for 5 mins or until soft, stirring sometimes.
Transfer the onion into a large bowl, add the butternut squash, sage,& black pepper into the bowl & mix together gently.
Pour the butternut mixture into a medium oven proof dish (brushed with cooking oil) & bake for 20 mins.
Sprinkle clue cheese evenly over the butternut squash mixture & then sprinkle the breadcrumb mix evenly as well.
Bake for another 10 mins or until the cheese is melted & breadcrumbs are golden.
