What you need:

4 medium smooth potatoes cut into small wedges
4 chicken breasts or 8 thighs, cut into chunks
2 tbsp Sundried tomato paste
1 tbsp olive oil
2 cloves garlic, sliced
5 whole mini peppers
10 cherry tomatoes
2tbsp fresh parsley, chopped

What you do:

Preheat oven to 200C/400F /Gas Mark 6.

Place all of the ingredients (except parsley) into a sandwich bag and shake to ensure the potatoes and chicken are evenly coated with the oil and tomato paste.

Spread the ingredients out into a single layer on one or two baking trays, depending on size, and season.

Place in oven and cook for 20-25 minutes until browned and tender.

Scatter with parsley and serve with extra seasonal salad leaves.

What you need:

1lb /450g  chicken breasts and thighs, skinned
1 ¾ pints /1 litre chicken  or vegetable stock
2 bay leaves
2oz / 60g  long-grain rice
2 leeks, thinly sliced
2 carrots, grated
pinch of ground cloves
1 tbsp chopped parsley
1 tsp sea salt

What you do:

Place the chicken in a pan with the bay leaves and pour in the stock. Bring to the boil then reduce the heat, cover, and simmer for 30 minutes.

Skim the surface of the soup and discard any scum that has formed. Add the vegetables, rice, cloves, and salt, bring back to the boil, reduce the heat, cover, and simmer for a further 30 minutes.

Remove the bay leaves and discard. If you wish, you can lift out the chicken, remove the meat from the bones, then return the meat to the soup.

Ladle the soup  between individual serving bowls and serve while still hot.

What you need:

3 tbsp mascarpone
1 tbsp finely chopped rosemary
1 garlic clove , crushed
2 chicken breasts , skin on
4 slices Parma ham
splash olive oil
juice of half a lemon

What you do:

Heat oven to 200C/400F/gas mark 6.

Mix the mascarpone with the rosemary, garlic and seasoning. Place the chicken breasts on a board and lift, but don’t detach, the skin. Put a spoonful of the mascarpone mix under the skin of each breast. Wrap 2 slices of prosciutto around each, as neatly and tightly as you can, to keep the filling enclosed.

Heat a non-stick frying pan, add the olive oil and quickly brown the chicken on both sides. Transfer to a roasting tin, then finish off in the oven for 15-20 mins until just cooked.

Add the lemon juice to the roasting tin and stir over the heat, scraping off any crispy bits. Spoon the juices over the chicken and serve with potatoes and green beans.

What you need:

2 – 3 chicken fillet  breasts cut into large chunks
Kosher salt
2 tbsp extra-virgin olive oil
1 red pepper de-seeded & cut into chunks

1 orange pepper de -seeded & cut into chunks
8 medium shallots cut into wedges
20z / 55 g fresh sage, torn
4 fl oz /125 ml chicken broth
2 oz / 60 ml maple syrup
2 0z /60 ml apple cider vinegar

What to do :

Pat the chicken dry and season all over with salt.

Heat a large frying pan over high heat and add the olive oil. When the oil is hot,  add the diced chicken and stir occasionally  until cooked about 5  – 7 minutes.

Turn the chicken and add the peppers, shallots and sage to the frying pan.

Reduce the heat to medium high and cook until the chicken is thoroughly around 4 to 5 minutes. Transfer the chicken to a plate and continue to cook the peppers and shallots, stirring, until golden, about 2 more minutes.

In the meantime  make the glaze:

Mix the chicken broth, maple syrup, vinegar and 1/2 teaspoon salt in a small bowl.

Add the mixture to the frying pan with the peppers and shallots and boil until reduced by about three-quarters, 2 to 3 minutes. Return the chicken to the skillet, turning to coat, until cooked through, about 2 more minutes.

Serve hot.

What you need:

4 chicken fillets
4 streaky bacon rashers
8 oz / 225 g  garlic & herb cream cheese

What to do:

Preheat the oven at 180C / 350F / gas mark 4
Line an oven proof baking dish with foil.
Cut a pocket along each of the chicken fillets making sure you don’t cut right through.
Fill each pocket with the cream cheese, then wrap a rasher of bacon around each one making sure the seam is at the bottom.
Cover with foil and bake for around 30 mins or until the juices run clear.
take off the foil, and cook for a further 5 mins or until the bacon is browned & crispy.
Serve immediately.

What you need:

1 tbsp sunflower oil
2 chicken breasts cut into bite size pieces
8oz / 225g spaghetti
1 large onion chopped
150g pesto sauce
7oz / 200ml creme fraiche
1or 2 fresh tomatoes chopped into pieces.
Parmesan cheese (grated)

What to do:
Heat the oil in a frying pan, and gently cook the chicken, turning until fully cooked.
Cook the spaghetti following the packet’s instructions.
Remove the cooked chicken from the heat, and stir in the chopped onions, pesto and creme fraiche blending well.
Drain the pasta and mix in with the chicken mixture.
Divide into 4 serving bowls & garnish with the chopped tomatoes, and sprinkle with Parmesan cheese to serve.
