What you need:

1 1/2 fillet steak, cut into thick strips
1 red pepper
1 green pepper
1 tbsp Oil
1 tsp Cumin seeds
1/2 tsp Fennel seeds
1 Onion, cut into thick wedges
1 Garlic clove, crushed
1 inch piece of Ginger, finely chopped
1 red chili, finely chopped
1 tbsp Curry paste
1/2 tsp salt

What you do:

Cut the red and green peppers into about 1 inch chunks.

Heat the oil in a non-stick frying pan and fry the cumin and fennel seeds for about 2 minutes or until they begin to splutter.

Add the onion, garlic, ginger, and chilli, and fry for a further 5 minutes.

Add the curry paste and salt and fry for a further 3-4 minutes.

Add the peppers and stir-fry for about 5 minutes.

Stir in the beef strips and continue to fry for 10-12 minutes or until the meat is tender.
Serve with warm naan bread.

What you need:

1lb steak (sliced into thin strips)
6 tbsp cornstarch (for dusting)
oil (for frying)

Marinade:
1 egg
¼ tsp salt
2 tbsp water
1 tbsp cornstarch

Sauce:

4 tbs water

4 tbsp sugar
3 tbsp ketchup
2 tbsp vinegar
¼ tsp crush chili pepper
2 tsp cornstarch

Vegetables:
1 tsp garlic (minced)
1 medium red  pepper (diced)
1 medium green  pepper (diced)
1 medium white onion (sliced)

What you do:

Cut beef into thin strips . In a bowl of sealable bag combine all marinade ingredients and mix well. Add beef slices and marinate for 15 minutes.
While beef in marinating mix all of the sauce ingredients together in a bowl and refrigerate.

When the beef is done marinating coat the beef slices with 6 tbsp of cornstarch. Remove any access cornstarch and deep fry (either in a deep fryer or wok) beef slices in batches until floating or golden brown. Drain on paper towels.

Add a couple tbsp of oil to the wok and add minced garlic and stir fry for 10 seconds. Add red and green  peppers and onions and stir fry for 2 minutes. Remove vegetables and set aside.

Pour sauce into the wok and heat until boiling.

In a serving dish add beef and vegetables and coat with the sauce.

What you need:

5¼ oz  /150g chopped onion
1 green pepper, seeded, chopped
1 jalapeno pepper, seeded, finely-chopped
2 cloves garlic, crushed
1 tsp chilli powder
1 tsp ground cumin
½ tsp salt
¼ tsp freshly ground black pepper
2.1 pts /1.2 vegetable or  chicken stock
1 (14 oz /400g) ) tin diced tomatoes
1 (14 oz /400g ) tin pink beans, rinsed and drained
3½ oz /100g diced fresh avocado, for garnish
2 tbsp chopped fresh coriander leaves, for garnish
Lime wedges, for garnish

What you do:

In the bottom of a slow cooker, combine the pork, onion, green pepper, jalapeno, garlic, chilli powder, cumin, salt and pepper. Stir to combine.

Add the stock, tomatoes and beans, cover and cook on low for 6 to 8 hours or high for 3 to 4 hours.

When ready to serve, ladle the soup into bowls and top with the avocado and coriander. Garnish the soup with lime wedges.

What you need:

3 tbsp vegetable oil
3 tbsp all-purpose flour
1 small onion, chopped
1 green pepper, chopped
2 stalks celery, chopped
3 cloves garlic, chopped
Kosher salt and freshly ground pepper
1 tbsp soy sauce or Worcestershire sauce
1 tsp smoked paprika (preferably hot)
2 cups low-sodium vegetable broth
1 pound kale or Swiss chard, stemmed and chopped
1 10 oz  package frozen black-eyed peas
Brown rice, for serving (optional)

What you do:

Heat the vegetable oil in a large pot over medium-high heat. Add the flour and cook, stirring, until golden, about 3 minutes. Add the onion,  pepper, celery, garlic, 3 tbsp water and 1/4 tsp each salt and pepper.

Reduce the heat to medium, cover and cook, stirring occasionally, until the vegetables soften, about 8 minutes.

Add the soy sauce and paprika and cook, stirring, 30 seconds. Stir in the vegetable broth, scraping up any browned bits from the bottom of the pot, then cover and bring to a boil.

Add the greens and black-eyed peas to the pot. Reduce the heat, cover and simmer, stirring occasionally, until tender, about 15 minutes. Season with salt and pepper.

Serve with the rice.

What you need:

2 tbsp Olive Oil
8 Chicken Thighs
1 Spanish Onion  (sliced)
1 Green pepper de-seeded & chopped

1 Red Pepper de-seeded and chopped
2 Garlic Cloves, finely chopped or crushed
1 tsp Smoked Paprika
1 Bay Leaf
230 g tin chopped Tomatoes
1 tsp Thyme Leaves
1 tsp Dried Oregano
6 0z /175 g Long-Grain Rice
1 pinch Saffron Threads
1 1/2 pints / 750 ml Chicken Stock
2 tbsp Tomato Purée
½ Lemon, juice
1 pinch Salt
1 pinch Black Pepper, freshly ground
4 oz / 100g Frozen Peas

What you do:

Preheat the oven to 180°C /350°F/Gas mark 4.

Heat half the oil in a large saucepan  and fry the chicken thighs over high heat, turning frequently, or until evenly browned. Remove from the saucepan , drain, and set aside.

Add the remaining oil, reduce the heat and fry the onion until softened. Add the chopped peppers and garlic and fry for 5 minutes, or until they start to soften. Add the paprika, bay leaf, tomatoes, thyme, and oregano, and stir in the rice. Fry for 1–2 minutes, stirring constantly.

Crumble in the saffron, add the chicken stock, tomato purée, lemon juice and season to taste with salt and pepper.

Pour into an oven proof casserole dish &  place the chicken thighs on top,  pushing them down into the rice, cover, and cook in the oven for 15 minutes. Add the peas and return to the oven for a further 10 minutes, or until the rice is tender and has absorbed the cooking liquid.

Serve hot, straight from the oven in the  casserole dish.

What you need:

1/2 lb minced beef
1 onion  onion ( chopped)
1 medium green pepper ( de-seeded & diced )
2 sticks  celery ( chopped)
1 large tin  chopped tomatoes, un-drained
1-1/2 tsp Cajun seasoning (dried)
7 1/2 oz  macaroni and cheese dinner mix
2 tbsp  milk
1 tbsp butter

What to do:

In a large saucepan, cook the minced beef, onion, green pepper and celery over medium heat until meat is no longer pink then drain.

Add  the tin of tomatoes and the Cajun seasoning then cook, uncovered, for 15-20 minutes, stirring occasionally.
In the mean time , prepare the macaroni and cheese according to packet directions, using 2 tbsp  milk and 1 tbsp of butter.

Stir in the beef mixture &  cook for  another 2-3 minutes or until its all heated through thoroughly.

Serve hot .

What you need:

3 tbsp of oil
1 onion chopped
8oz / 225g long grain rice
1 green pepper, diced & seeded
1tsp chilli powder
1pt / 600ml boiling water
3 1/2oz / 100g sweetcorn ( tinned)
8oz / 225g red kidney beans (tinned) drained
2 tbsp freshly chopped coriander for garnish.

What to do:

In a wok heat the oil. Add the onion gently fry over a medium heat for around 2 mins.
Lower the heat, add the rice, pepper, & chilli powder to the onions in the wok & fry for 1 min. Gently pour in the boiling water, bring to the boil then simmer for around 15 mins.
Then stir in the sweetcorn, kidney beans & some of the coriander and gently heat through stirring occasionally.
Sprinkle the top with the rest of the coriander and serve.

What you need:

100 g of lean minced beef

45 g of kidney beans, canned and drained ½ clove of garlic
½ onion
½ green pepper
1 tsp of olive oil
1 small tin of chopped tomatoes (200g)
1 tsp of tomato puree
½ beef stock cube
1 tsp chilli powder
½ tsp of mixed herbs

What to do:

Heat the olive oil in a non-stick saucepan and cook the onion until slightly softened. Add the garlic and diced pepper and cook for another few minutes. Add the minced beef, brown and then drain off excess fat. Stir in all other ingredients, adding more or less chilli powder to your taste. Cover and cook for 20 minutes.
Serve with rice.
