What you need:

For the witches brew

6 cups broccoli florets – steamed

2 cups veggie or mushroom broth
1/3 cup soy creamer, plain
1 cup white potato, baked with skin
1 cup white cannellini beans
2 Tbsp apple cider vinegar
1/3 cup grated cheddar cheese
2-3 Tbsp olive oil + salt to taste
2 Tbsp maple syrup (optional for a sweet accent)
garnish: roasted broccoli florets coated in melted cheddar cheese

For the Cheesy Garlic Broomsticks and Witches Hats
1 ball pizza dough
garlic granules
1/4 cup melted butter
1/2 cup grated cheddar cheese

What you do:

Prepare soup in a high speed blender or use immersion handstick blender).

First steam 6 cups of broccoli florets. Add 3 cups to a blender. Also add in the potato, beans, cheese, creamer, optional oil/butter and veggie broth. Blend until smooth. Add in the remaining broccoli and either pulse to keep the soup “chunky” style or puree smooth for a creamy soup. Salt and pepper to taste. Simmer on stove top until ready to serve.

For the broomsticks:

preheat oven to 200 C /400 F / gas mark 6

Roll out dough to 3/4 ” thick. Slice into long strips (the broomsticks). Then using about 1/4 of the dough, cut out triangle shapes. You can make these into witches hats as well as use them for the broomstick bristles. Slice the triangles into a broom shape. The dough will rise as it bakes, but still resemble the brooms. Lay the brooms and hats on a greased baking sheet. Brush with melted butter & sprinkle with garlic and cheese.

Bake for ten minutes, Broil on high for an additional minute until the cheese bubbles.

Serve the brew!

What you need:

4 x  portobello mushrooms or flat mushrooms
10g butter
2 tsp olive oil
30g Gruyère cheese or Cheddar (or other 
hard cheese of your choice), grated
A little fresh watercress
4 wholemeal rolls, lightly toasted
chilli relish

what you do:

Preheat the grill to high. Put the mushrooms on a baking tray.

Dot each with a little butter and a tiny drizzle of oil, sprinkle over the grated cheese and grill for 5 minutes or until cooked.

Scatter the watercress over the bottom halves of the bread rolls and top with the grilled mushrooms. Spoon some  chilli relish on top.

Cover with the top halves of the rolls.

What you need:

6 tbsp softened butter
2 tsp finely chopped shallots
1 clove garlic, crushed and finely chopped
1 tbsp finely chopped celery
1 tbsp finely chopped fresh parsley
¼ tsp salt
1/8 tsp ground black pepper
12 large mushrooms, cleaned with stems removed
12 large canned snails

What you do:

Preheat the oven to 190C / 375F / gas mark 5

Mix together 6 tablespoons of the softened butter with the shallots, garlic, celery, parsley, salt, and pepper. Place a small spoonful of herb butter and a snail in each mushroom cap, and then brush the exterior of the mushroom with a bit of the herb butter. Arrange the mushrooms in a shallow baking dish and bake them for 15 minutes.

Serve hot.

What you need:

2 cups long grain rice

2 tbsp olive oil

1 litre of hot water

2 bay leaves

salt & pepper to taste

1 vegetable stock cube

1 tsp paprika powder

1/2 tsp turmeric  powder

1 pinch of saffron

2 onions diced

1 leek sliced

1 small aubergine cut into cubes

1 courgette (zucchini) cut into semi circles

1 of each red & yellow  peppers diced

5 to 6 button mushroom quartered

What you do:

Wash and soak the rice in some hot water, while you prepare the vegetables. Chop into fairly large chunks and boil the water.

Pre heat a large sauce pan or wok on medium temperature.

Drain the rice, add the oil to the pan and all the ingredients and sauté for a few minutes, you will see a shine on the rice. Pour the hot water and cover and cook for 15 minutes. Mix and check to see if the rice is done, add more water if necessary and cook until all the water has evaporated.

serve with some lemon wedges.

What you need:

4 pork chops
30g dried porcini mushrooms
1 large clove garlic, finely chopped
1 small onion, finely chopped
250ml cream
salt and pepper
1 tbsp olive oil
1 tbsp herbs de provence (optional)
1 small glass white wine (optional)

What you do:

Soak mushrooms in 250ml hot water for 30 minutes. Squeeze mushrooms, reserving liquid. Chop mushrooms.
Heat oil in a large frying pan over medium heat. Add garlic and onion. Saute until soft and translucent, but do not brown.
Sear both sides of the pork chops, remove and set aside.
Add mushroom soaking liquid, herbs and wine to the pan. Cook until liquid has reduced by half.
Return pork and mushrooms to the pan and lower the heat. Cover and simmer for 10 minutes.
Add cream and heat until just bubbling. Adjust seasonings to taste.
Serve.

What you need:

3 eggs
1 x 5 oz/ 125 g tin of condensed soup ( asparagus, celery or mushroom work well )

What you do:

Pour the condensed soup into a saucepan, then add the eggs & whisk vigorously with a fork into the soup.
Stirring continuously over a medium heat until the eggs have absorbed all the soup & have become thick & well flavoured.
Serve with toast.

What you need:

1 1/2 tbsp olive oil
500g / 16 oz stir-fry beef
1 brown onion ( diced)
200g / 7 oz  button mushrooms ( thickly sliced)
1 tbsp  ground paprika
400g  tin condensed tomato soup
400g tin chopped tomatoes
Ready cooked steamed rice

chopped flat-leaf parsley leaves and light sour cream, to serve

What to do:

In  a large frying pan  heat 2 tsp of  oil  over high heat.

Fry half of the beef  stirring often  for  around 3 minutes or until browned. Transfer to a plate. Repeat again with oil and the remaining beef.

Add remaining 2 tsp  oil  and add the onions and mushrooms to pan.

Cook for 3 minutes or until tender. Add the paprika &  cook stirring  for 1 minute.

Add soup and tomatoes. Stir until well mixed then bring to the boil.

Reduce heat to low. Return the beef and any juices to pan. Simmer for 3 minutes or until warmed through. Season with salt and pepper.

Spoon rice into bowls. Spoon over goulash and sprinkle with parsley. Top with a spoon of sour cream and serve.

What you need:

1 chicken breast ( cut into thin strips)
1 tbsp oil
1 garlic clove ( crushed)
3 oz / 75 g beansprouts
4 mushrooms ( sliced )
2 oz / 50 g mngetout
4 spring onions ( sliced)
5 oz / 150 g straight to wok noodles
2 tbsp oyster sauce

What to do:

Using a wok, heat the oil until really hot.
Add the chicken and gently fry for around 3 mins.
Add the garlic , mangetout , mushrooms , spring onions & mushrooms and cook for 2 mins.
Add the wok noodles, oyster sauce & 2 tbsp of water.
Heat all through, stirring well for 2 mins.
Serve straight away .
