What you need:

4 oz / 100g sugar
1 oz / 25g butter ( melted)
1 beaten egg
1 lemon ( grated rind & juice)

What you do:

In a saucepan, put the butter, sugar & egg and whisk together well. Add the grated rind & lemon juice then mix all together well.
Simmer gently over a low heat all the time stirring until it boils. Continue cooking for around 3 – 5 mins until the mixture is fairly thick stirring all the time.
Pour the mixture into a heated jar then cover it & seal it.
Keep it refrigerated.

What you need:

3 eggs
15 fl oz / 450 ml milk
2 oz / 50 g chopped ham (optional)
1 onion diced
6 oz / 150 g grated cheese
1 pastry case
2 tomatoes ( sliced)

What you do:

preheat the oven to 190C / 375F / gas mark 5
Whisk together the eggs & milk, then add all the other ingredients ( except tomatoes) & mix together thoroughly.
Place the slices of tomatoes on the top.
Place in the oven and bake for around 50 mins until firm to the touch.
Serve hot or cold.

What you need:

8 oz / 200 g prawns ( shelled)
juice of 1/2 a lemon
3 tbsp ovile oil
1 tbsp tomato puree
1 tbsp paprika
1/4 tsp cayenne pepper.

what you do:

Divide the prawns between 4 ramekins ( or something similar)
Beat all the other ingredients together & pour over the prawns.
Place the ramekins into a microwave and cook on full power for around 2 mins.
Serve straight away.

What you need:

15oz / 375 g tin of pineapple drained & chopped ( keep the juice)
1 large chopped onion
2 courgettes chopped
1 tbsp curry powder
1 tbsp mango chutney
20 fl oz / 600 ml chicken stock
10 fl oz /300 ml pineapple juice
juice of 1/2 a lemon

What you do:

Fry the onion in a little oil until softened then add the courgettes & cook for a few minutes . Add all the other ingredients & simmer gently until soft.
Liquidize and put through a sieve.
Can be served hot or cold.

What you need :

1 1/2 lb / 700 g potatoes.
5 oz / 150 g Goose fat.

What to do:

preheat the oven to 200C / 400F /gas mark 6.
Peel the potatoes & put in a saucepan of water, and cook for 15 /20 mins or until soft. Drain well, put back into saucepan and shake slightly to soften the edges ready for crisping up.
Meanwhile , put all the goose fat into a large roasting tin and put in the oven until smoking hot. Remove from the oven and carefully pour in the potatoes. Return to the oven and cook for around 40 mins, turning them twice during the roasting period.

you will need:

5 oz /140g rolled oats
4oz / 115g demerara sugar
3oz / 85g raisins
4oz /115g margarine or butter (melted)

What to do:

Preheat the oven to 190C / 450F / gas mark 5
Lightly brush a retangular, shallow cake tin with oil.
In a bowl, mix together the oats, sugar & raisins with the margarine, mixing well.
Pour the mixture into the shallow tin & press down firmly with the back of a spoon.
Bake in the oven for about 15 / 20 minutes or until golden brown.
Using a sharp knife, mark out up to 14 slices, then leave to cool in tin for 10 /15 mins.
carefully cut & transfer the slices to a cooling rack until completely cool.
