What you need:

4 (6 oz) salmon fillets
1/4 cup extra-virgin olive oil
1/2 tsp salt
1/2 tsp freshly ground black pepper
1 tbsp minced fresh rosemary leaves
8 lemon slices (about 2 lemons)
1/4 cup lemon juice (about 1 lemon)
1/2 cup Marsala wine (or white wine)
4 tsp capers
4 pieces of aluminum foil

What you do:

Brush top and bottom of salmon fillets with olive oil and season with salt, pepper, and rosemary.

Place each piece of seasoned salmon on a piece of foil large enough to fold over and seal. Top the each piece of salmon with 2 lemon slices, 1 tbsp of lemon juice, 2 tbsp of wine, and 1 tsp of capers. Wrap up salmon tightly in the foil packets.

Place a grill pan over medium-high heat or preheat a gas or charcoal grill. Place the foil packets on the hot grill and cook for 10 minutes for a 1-inch thick piece of salmon. Serve in the foil packets.

What you need:

2 x 5oz / 125g salmon fillets
2 tbsp / 30 ml brown sugar
1 tsp / 5ml dijon mustard
juice of a lime

What you do:

Lay the salmon fillets side by side in a shallow dish.
Whisk together the lime juice, sugar & mustard until smooth.
Pour the mixture over the salmon fillets & leave to marinate for around 15 mins.
Cook the fillets in a microwave oven until almost done then pour the sauce over & grill for 2 minutes.
Serve immediately.

What you need:

4 Salmon Steaks, skinned

½ Cucumber
250g Plain Yogurt
2 tsp Dijon Mustard
1 Spring Onion, finely chopped
1 tbsp Dill, chopped
2 tsp Olive Oil
juice of  ½ a  lemon,

1 pinch Salt

1 pinch Black Pepper, freshly ground

What to do:

Preheat the oven to 200°C /400°F/Gas 6

Finely dice the cucumber and place in a sieve over a bowl.

Sprinkle with salt and leave to drain for 1 hour. Rinse with cold water and pat dry with kitchen paper.

Stir the drained cucumber into the yogurt and add the mustard, spring onion, and dill. Season to taste with salt and pepper.  Set aside.

Arrange the salmon fillets in a shallow baking dish, brush with oil, and season to taste with salt and pepper.

Sprinkle the salmon with lemon juice and bake in the oven  for around 8–10 minutes, depending on the thickness, until just cooked through but still moist inside.

Remove from the oven and stir the juices from the dish into the cucumber sauce.

Serve the salmon hot or cold with the sauce spooned over it.

What you need:

2 skinless salmon fillets
4 leeks , (trimmed and finely chopped)
1 oz / 25g butter
3 1/2 oz / 100g full-fat crème fraîche/ plain greek yoghurt  or cream cheese
6 sheets filo pastry

What to do:

Preheat the oven to 200C/ 400F/ gas 6.
Put the chopped leeks into a large saucepan with 3 tbsp water and a couple of knobs of butter.

Cover, then cook for 10 mins until tender. Remove from the pan, allow to cool, then mix with the crème fraîche and some seasoning.
To make the parcels, brush a sheet of pastry with melted butter, then lay 2 more sheets on top, brushing butter between each layer. Place a salmon fillet in the middle, season, then spoon over half the leek mix. Fold the ends over the top, pull up the sides and scrunch together to enclose. Repeat.
Brush both the parcels with melted butter. Place onto a lightly greased baking tray, then cook for 20 / 25 mins until golden and crisp.

What you need:

2 salmon fillets ( around 5 to 6oz each)
125 ml rice wine
125 ml water
1 tbsp sugar
1 tbsp salt
50 ml Julienned ginger
1 tsp peppercorns (Toasted)
For the smoking mix:
8 oz / 225 g long grained rice
8 oz /225 g strong tea ( any make)
8 oz /225 g orange peel.

What to do:

Place the salmon into a shallow oven proof dish.

In a bowl, mix together rice wine, water, sugar and salt, stir until dissolved.

Add ginger and peppercorns to liquid.

Pour mixture onto salmon and turn to coat.

In the bottom of the smoker over high heat, place the  rice, tea and orange peels then stir until thoroughly mixed.

Place a rack into the smoker and lay the salmon pieces on top of the rack. When the mixture starts to smolder, turn the heat down to medium and continue to smoke another 15 minutes.
